- 500 g of black pudding
- 1 puff pastry
- 30 g of soft butter
- 30 g of light cane sugar
- 5 cl of cider vinegar
- fine grey sea salt

Preheat your oven to 180°C.

Cut the apples into 6 pieces. Peel and core them with a knife.

Butter an oven-safe non-stick frying pan or a cake tin that can be used on the stove. Pour the sugar over the butter and arrange the apples in a rosette pattern. Place the pan on the heat and brown them for 10 minutes. Deglaze with the cider vinegar and add salt.

Cut the black pudding into slices and place over the apples. Cover everything with the puff pastry and tuck the edges of the dough inside. Make slits in the pastry and bake for 30 minutes.

Let cool for 15 minutes and unmold onto a serving platter. Serve with a green salad.
