- 100 g granulated sugar
- 100 g powdered sugar
- 100 g almond powder
- 100 g liquid cream
- 1 drop food coloring
- 35 ml water
- 2 egg whites
- 200 g white chocolate

Mix and sift the icing sugar with the almond flour. Mix with 1 of the 2 egg whites.

In a saucepan, heat the sugar with the water until it reaches 118°C.

Whisk the second egg white until stiff peaks form and pour the 118°C syrup over it. Continue whisking for 5 minutes.

Gently fold the meringue into the icing sugar/almond mixture and add the green food coloring.

Place the macaron batter in a piping bag with a size 8 plain tip. On a sheet of parchment paper, pipe round macarons of 4 different diameters: 5cm, 4.5cm, 4cm and 3.5cm.

Bake the shells at 130°C for 13 minutes.

For the ganache: Melt the white chocolate. In parallel, heat the liquid cream in a saucepan and when hot, pour it in 3 additions over the white chocolate. Stir well, then let it set in the fridge for 30 minutes.

Place the ganache in a piping bag with a star tip. Stack your macaron shells from the largest to the smallest diameter, filling with ganache between each layer.

Decorate with small sugar pearls and optionally with a sugar paste star on top of the tree.
