    Wash, string, and dice the celery into small cubes.

    Wash and chop the chives.

    Prepare a light mayonnaise: mix the egg yolk and mustard. Whisk the mayonnaise while gradually pouring in the oil. Add a pinch of paprika or Espelette pepper.

    Zest the lemon.

    Dilute a pinch of salt with a few drops of lemon juice in the mayonnaise. Add the lemon zest.

    Drain the crab meat and press it with the back of a tablespoon to remove the liquid. Mix it with the celery and the mayonnaise.

    Split the bread rolls in half without opening them completely. Toast them in a toaster.

    Fill them with the crab mixture, sprinkle with chives and a pinch of paprika or Espelette pepper.
