- 2 dried figs
- 2 tablespoons of kefir grains
- 4 tablespoons of sugar
- 1/2 lemon, juiced
- 1 l of water (preferably mineral)

In a one-liter glass bottle or container, put the kefir grains, sugar, and lemon juice. Add a little water and dissolve the sugar as much as possible by swirling the bottle.

Add the dried figs and fill the rest of the space with water.

Place a piece of gauze over the bottle and tie it with string; air must be able to pass through, but not insects.

Then leave the bottle at room temperature for at least 24 or 36 hours (depending on the acidity and bitterness you want) (less in summer) (if you want it more acidic or bitter, leave it for 36 hours, otherwise 24 hours). Generally, when the figs have risen, the drink is ready, but you can leave it longer.

Once the drink has rested enough, strain it and put it in a "lemonade bottle" type container with a sturdy cap.

Store the fruit kefir in the refrigerator once it is ready.
