Ingredients
8 servings
- 960 ml of water
- 1 sachet of agar-agar
- 189 g of anti-reflux powdered infant rice milk (e.g., Modilac or Novalac)
- 1 sachet of lactic ferment for homemade yogurt (Alsa)
- 3 sachets of vanilla sugar
Steps
- 1
In a large bowl, mix the water and milk powder until there are no lumps.
- 2
Take 4 to 5 ladles of this mixture into a small saucepan. Add the agar-agar, whisking well, and bring to a boil. When it boils, reduce the heat so the milk continues to simmer while whisking for 2 minutes.
- 3
After 2 minutes, turn off the heat. Pour the contents of the saucepan into the bowl and mix well with the whisk until homogeneous.
- 4
Add the vanilla sugar and mix well with the whisk.
- 5
Check that the mixture is lukewarm before adding the packet of ferment and mix again with the whisk.
- 6
Divide into 8 glass yogurt jars without lids.
- 7
Cook in a yogurt maker for 4 hours followed by 4 hours of resting before putting on the lids and storing in the fridge. Consume within 7 days. (For those using the Magimix Cook Expert like me: place the jars in the XXL steam basket, expert program, 4h at speed 0 at 65°C, then leave for another 4 hours at the end of the program without touching them).
