- 1 kg of medium-sized new potatoes
- 100 g of coarse grey sea salt
- 3 spring onions
- 4 garlic cloves
- 1 dl of grape seed oil
- 50 g of unsalted butter
- 1.2 kg of fava beans in the pod (or 300 g shelled)
- 1 chorizo

Rub the potatoes with the coarse salt in a kitchen towel. Rinse and start cooking in cold water. Drain at the first boil.

In the same water, pour in the shelled fava beans and blanch for two minutes. Cool immediately in ice water.

In a casserole dish, heat the grapeseed oil and butter. Brown your halved potatoes in the casserole. Meanwhile, slice the spring onions and garlic cloves, remove the skins from the fava beans, and add everything to your casserole.
