- 1 duck
- 6 canned tomatoes out of season
- 3 vanilla beans
- 6 cloves of garlic
- 6 onions
- 1 chicken bouillon cube
- 1 bunch of fresh thyme
- oil

The day before, cut the duck into pieces. Place in a bowl and let marinate in the fridge covered with the following mixture: the seeds from the 3 vanilla pods (open the pod lengthwise and scrape the inside with the back of a knife to collect the seeds), 3 tablespoons of oil, thyme, salt, pepper, and 50 cl of broth. Add the scraped pods.

On the day: chop the garlic, cut the onions and tomatoes into pieces (or use canned peeled tomatoes out of season).

Heat oil in a Dutch oven. Brown the drained duck pieces on each side. When well browned, add the onions and brown them as well.

Add the garlic and tomatoes and let cook for 10 minutes.

Pour the marinade over the top, bring to a boil, then let simmer for 1 hour over low heat.
