- 4 Jacquet seed creation burger buns
- 4 lettuce leaves
- 1 red onion
- 4 sprigs of coriander
- salt and freshly ground black pepper
- 1 avocado
- 1/2 lime
- 3 drops of Tabasco
- 5 sprigs of coriander
- 1 fresh sheep's milk cheese
- 5 sprigs of parsley
- 1 sprig of mint
- 500 g chickpeas
- 50 g spring onion
- 5 sprigs of parsley
- 5 sprigs of coriander
- 25 g cornstarch
- 2 pinches of baking powder
- 2 tablespoons grapeseed oil

Preheat the oven to 180°C.

Peel and cut the red onion into rings.

Prepare the falafel patties: Rinse and drain the chickpeas. Peel and finely chop the spring onions. Finely chop the parsley and coriander. In a bowl, mash the chickpeas with a potato masher, mix them with the onions, parsley, coriander, cornstarch, and baking powder. Season with salt and pepper. Mix well. Form 4 falafel patties.

Prepare the mashed avocado: Cut the avocado in half, remove the pit, and scoop out the pulp with a tablespoon. Add the lime juice, Tabasco, coriander, and salt. Roughly mash the ingredients to form a chunky puree.

Prepare the fresh cheese: finely chop the parsley and mint, mix them with the sheep's cheese, season with salt and pepper.

Heat the oil in a pan. Brown the falafel patties on each side. Set aside on paper towels.

Cut the burger buns in half and warm them in the oven for 1 minute.

Spread the mashed avocado on the base of the burger buns. Garnish with lettuce, the falafel patty, the herb cheese, red onion, and a sprig of fresh coriander. Close the burger and enjoy.
