Ingredients
6 servings
- 1 egg
- 200 ml coconut cream
- 400 g rice flour
- 7 tablespoons sugar
- 400 ml coconut milk
- 1 packet dried yeast
- 1 glass of water
Steps
- 1
Prepare the rice porridge by putting the glass of water in a saucepan with 3 tablespoons of rice flour. Cook over low heat until the mixture dries out. Let cool.
- 2
In a bowl, combine the remaining rice flour, the cooled porridge, yeast, coconut cream, and coconut milk. Mix well by hand until you get a consistency similar to pancake batter. Cover with a cloth and let it rest at room temperature for at least 6 hours. I usually prepare it the day before.
- 3
In a bowl, mix the egg and sugar. Add to the risen dough.
- 4
Heat your pancake pan and fill each mold 3/4 full. Cook each side until you have a nicely colored bun. The pan used is a special pan (Danish pancake pan) with molds, available on Amazon.
