    Cut the meat into thin strips. Peel and thinly slice the red onion, peel and grate the ginger, wash the snow peas and bean sprouts.

    Plunge the snow peas into a large pot of salted boiling water, let boil for 2 min, add the bean sprouts, let boil for 1 min. Drain everything in a colander.

    Heat the oil in a wok or a large frying pan. Sear the pieces of veal for 2 to 3 minutes over high heat while stirring, remove them to a plate.

    Put the sliced onion in the wok, sauté for 2 minutes over high heat. Add the snow peas, bean sprouts, and grated ginger, sauté for 2 minutes.
