- 1 lemons
- 2 tart apples
- 100 g walnuts
- 100 g Comté cheese 24 or 36 months
- 1 tbsp wholegrain mustard
- 2 tbsp cider vinegar
- 5 tbsp classic grapeseed oil
- 1 tbsp walnut oil
- salt and pepper

Mix all the ingredients for the vinaigrette.

Cut the endives in half lengthwise and remove part of the core. Thinly slice them into strips and place them in a salad bowl. Wash and cut the apples into thin slices, then cut them into strips. Add to the endives. Squeeze the lemon juice over them.
