  • 1 pack of filo pastry sheets
  • 300 g walnuts
  • 150 g butter
  • 200 g acacia honey
  • 50 g light brown cane sugar
  • 15 cl orange blossom water
  • 1 tablespoon cinnamon
  • 1/2 glass of water
  • grey sea salt

Steps

    Melt the butter in a saucepan.

    Finely grind the walnuts and add the light brown cane sugar. Pour into a bowl, add a third of the melted butter, 2 tbsp of orange blossom water, 2 tbsp of honey, and a small pinch of fine salt. Mix everything together to obtain a homogeneous paste.

    Preheat the oven to 180°C (356°F).

    Take a rectangular ovenproof dish and cut 5 sheets of phyllo dough to the size of the dish.

    Butter each sheet with a brush and place at the bottom of the dish. Fill with half of the walnut paste and repeat the operation.

    Close this assembly with 5 buttered phyllo sheets, sprinkle with cinnamon. Cut diamonds into this “mille-feuille” and bake for 25 to 30 minutes.

    Heat the honey with the remaining orange blossom water and the half glass of water.

    Cover the baklava with this mixture as it comes out of the oven and let it cool and rest overnight. Enjoy the next day with an aromatic tea!
