Ingredients

- 1 ISLOS® Greek Feta PDO
- 400 g green beans
- 1 tablespoon coarse salt
- 1 red onion
- 1 tablespoon flaked almonds
- 150 g redcurrants
- 12 pitted Greek black olives
- 1 tablespoon balsamic vinegar
- 3 tablespoons olive oil
- salt and freshly ground pepper

Trim the green beans by cutting the stem end at an angle and leaving the tip.

Bring a large pot of water with the coarse salt to a boil. Immerse the green beans for 8 minutes. Refresh them immediately under cold running water, drain well. Let cool.

Peel the red onion and cut it in half. Slice it into half-moons.

Pour the flaked almonds into a pan and toast them without any fat.

Remove the redcurrants from their stems.

Cut the feta into cubes.

Prepare a vinaigrette by mixing the balsamic vinegar, salt, and olive oil.

In a salad bowl, mix the beans, onion, olives, and redcurrants. Dress with the vinaigrette and mix.
