    Peel and dice the pears, pour them into a saucepan with the sugar and lemon juice and cook for 30 minutes, let cool completely. Drain well and blend until smooth. Melt the chocolate in the microwave with the cream for 2.30 min at 500W and mix well.

    Preheat your oven to Th.6 (180°C). Roll out a pastry sheet and brush with the dark chocolate cream, cover with a second sheet, brush with the pear compote and cover with the last sheet.

    Brush the pastry with egg yolk mixed with milk and icing sugar. Place a glass in the center of the pastry and cut it into 16 equal parts. Gently twist them two by two and join them together. Bake your pear and chocolate sun tart on your oven tray covered with parchment paper for about 30 minutes.
