- 2 bars of NESTLÉ DESSERT Dark chocolate
- 150 g of sugar
- 150 g of flour
- 40 g of butter
- 12 eggs
- 25 cl of liquid cream
- 1 tablespoon of praline

Preheat the oven to 180°C (350°F). Separate the whites from the yolks of 6 eggs. Whisk the yolks and sugar together until the mixture turns pale. Add the flour and mix until smooth.

Beat the egg whites until stiff and melt the butter in a saucepan. Gently fold the whites into the yolk mixture. Add the melted butter and gently mix again until smooth.

Pour the batter onto a rectangular baking sheet and bake for 8 to 10 minutes. Remove the sponge from the oven and invert the sheet onto a clean, damp cloth. Carefully peel the sponge off the sheet, then roll the sponge up in the cloth and let it cool completely at room temperature.

Separate the whites from the yolks of the remaining eggs and beat the whites into stiff peaks with a pinch of salt.

Melt the first bar of chocolate in a double boiler. Pour the melted chocolate over the yolks, whisking vigorously until completely smooth. Fold in the egg whites in 3 batches, gently, and chill the mixture for 1 hour.

Heat the cream in a saucepan. When the cream is hot, pour it over the remaining chocolate, broken into pieces. Stir until the mixture is smooth and keep chilled while preparing to assemble the log.

Unroll the sponge and spread it with the chocolate mousse. Roll the sponge back up, tightening it properly to form a cylindrical log. Trim the two ends of the log for a neat finish.

When the ganache has a creamy texture, spread it over the entire log in a thick layer. Sprinkle with a little praline, and keep the log in the fridge until serving.
