- 200 g canned or vacuum-packed jackfruit, rinsed and drained
- 2 burger buns
- 2 handfuls of iceberg lettuce
- 15 g red cabbage
- 1 onion
- 3 tablespoons barbecue spice rub (or smoked paprika if unavailable)
- 3 tablespoons barbecue sauce
- 2 tablespoons ketchup
- 1 tablespoon olive oil
- 2 tablespoons fromage blanc (or plain yogurt)
- 1 teaspoon cider vinegar
- salt and pepper

Slice the onion and red cabbage. Wash the lettuce and cut the burger buns in half.

Prepare the jackfruit: once well drained, mix it with the spices in a bowl.

Sauté the onion in a hot pan with olive oil. Lower the heat and add the jackfruit. Let it cook for 5 minutes before adding the barbecue sauce. Add a splash of water and let it simmer for about twenty minutes.

Warm up the buns and spread ketchup on the bottom half of the buns. Mix the red cabbage with the fromage blanc, vinegar, and pepper.
