- 1 pack of HERTA® LE BON VEGETAL® Grilled Soy & Wheat Bites
- 1/2 zucchini
- 1/2 eggplant
- 1 red onion
- 50g green asparagus tips
- 100ml milk
- 2 eggs
- 50g cherry tomatoes
- 25ml crème fraîche
- 40g grated cheese
- 1 pie crust
- dried oregano
- basil
Steps

Cut the zucchini and eggplant into pieces and the onion into rings. Take out the pie dough.

Sauté the vegetables for a few minutes in a little oil until golden brown, sprinkle with oregano, and let them cool. Blanch the asparagus (in boiling water for 1 minute) and rinse under cold water. Cut the tomatoes in half. Cook the grilled bites according to the instructions.

Preheat the oven to 180ºC. Line the quiche pan with the dough. Mix the milk with the crème fraîche, eggs, cheese, and season with salt and pepper.

Place the quiche pan on a baking sheet and distribute the fried vegetables, tomatoes, and grilled bites over the dough. Pour the milk and egg mixture over them, then arrange the asparagus on top.

Bake the quiche for about 40 minutes. Garnish with fresh basil and serve, for example, with an arugula salad with olive oil and balsamic vinegar.
