Steps

  1. 1

Melt the chocolate in a little water or milk. Once the chocolate has melted, add the butter.

  2. 2

Once everything is melted and mixed together, add the sugar.

  3. 3

When the mixture is smooth, add the 3 egg yolks one by one, then finally the flour.

  4. 4

Let it rest for a bit, then fold in the 3 egg whites beaten until stiff.

  5. 5

Bake at 165°C (gas mark 5/6) for 35 minutes.

  6. 6

VARIATION (see 6th meeting): After pouring half of the batter into the mold, I add a pistachio preparation made of 30g of chopped pistachios, 20g of sugar, and 10cl of crème fraîche, then I pour the rest of the batter. It creates a quite aesthetic and tasty pistachio filling. You can increase the amounts of sugar and/or pistachios, depending on whether you like it sweeter, more pistachio-flavored, etc. In this case, do not add Amaretto to the batter, as it masks the taste of the pistachios.
