Ingredients
4 servings
- 500 g of strawberries
- 1 half of a lemon
- 4 eggs
- 250 g of mascarpone
- 180 g of sugar
- 12 ladyfinger biscuits
Steps
- 1
Prepare 2 hours in advance. Place the ladyfingers in a dish. Wash, hull, and cut the strawberries into quarters, then place them in a bowl.
- 2
Drizzle the strawberries with lemon juice and 30g of sugar. Mash the strawberries using a fork. Spread enough of this mixture over the ladyfingers to soak them well. Place in the fridge.
- 3
Meanwhile, separate the egg yolks from the whites. Beat the yolks with 120g of sugar until the mixture turns pale. Add the mascarpone and mix.
- 4
Whip the egg whites until stiff peaks form, then add the 30g of sugar. Gently fold the egg whites into the yolk-sugar-mascarpone mixture. Pour the preparation over the soaked ladyfingers.
