Steps
- 1
DOUGH: Whisk the egg yolks and sugar until pale, then loosen the mixture with a little water.
- 2
Mix the flour and butter (cut into small pieces) with your fingers until you get a sandy consistency and all the butter is absorbed (!!! You must work quickly so the mixture doesn't get too soft!).
- 3
Pour the liquid mixture into the center of this "sand". Incorporate the ingredients quickly with a knife without overworking the dough.
- 4
Form a ball with your palms and knead (fraise) once or twice to make the ball more homogeneous.
- 5
Line a 25 cm diameter tart pan with the dough, cover with parchment paper and dried beans. Blind bake for 20 to 25 minutes at 180°C (gas mark 6).
- 6
PASTRY CREAM: Bring the milk to a boil with your chosen flavoring (vanilla or other).
- 7
Beat the egg with the sugar until the mixture forms a ribbon, then add the flour.
- 8
Pour the boiling milk over the mixture while stirring well.
- 9
Return to the saucepan over the heat. Cook while stirring very carefully. Remove from heat after it comes to a boil.
- 10
Pour the cream onto the tart shell and arrange the strawberries, cut in half, nicely on top.
